Pecan Dreams- The Great Food Blogger Cookie Swap

A few weeks ago I remember seeing a tweet from Lindsay at Love and Olive Oil about The Great Food Blogger Cookies Swap. I love cookies and love sending people gifts so I signed up immediately! I couldn't wait to get going on the cookies! I debated a lot about what I was going to send and kept going back and forth on a few recipes but kept coming back to these cookies. I'm not a big nut person but for some reason these just screamed Christmas Cookie to me. 

Sometimes I am a procrastinator but yet these cookies had to be out and in the mail by December 5th. Well, December 3rd I decided to go down our stairs too fast and ended up banging and stubbing the daylights out of my right foot to the point where we thought I had a few broken toes. I didn't want to go to the ER knowing there is nothing they can do for them anyway so we pulled out my old boot, iced the toes, and kept going!- I did go to the Dr. Last Monday and luckily nothing was broken! But my foot is still black and blue!

Here we are with Pecan Dreams. My mom thought these were like Mexican Wedding Cookies but honestly a great little ball of sugar powdered goodness. (Speaking of mother's, my mom is used to trying everything I make so she snuck a few of these cookies and I had exactly 38- a dozen to send out to each person and then a few to try- She ate 4! So my matches got 10 of these and then some of the Peppermint Krispies to make up for my dozen.)

Ah, Pinterest. How I love you! I wish I could spend more time with you but for now I will try to make more ideas you keep sending me!

Like this Biscuit Sticky Bun! Easy, peasy! I love breakfast (I'm sure you already know this though!) and love sweet treats with breakfast so when Carrie posted this on Pinterest I knew it had to be made!

There is even an orange version that I've seen floating around- which will be made soon too!

Twelve Weeks of Christmas Cookies-- Week 5!- Oreo Stuffed Double Chocolate Cookies

Can you believe that we are about 7 (eek!) weeks away from Christmas??!?!?!

As soon as I saw this recipe yesterday, I knew I HAD TO MAKE IT! Oreo cookies are a main stay in our house! My boys (husband included) absolutely love oreos. We had just enough in the pantry for me to make this recipe too! This recipe was easier than I thought it would be and I loved that aspect of it. I think it would be a little easier to wrap the cookie dough around the oreo if it was chilled and I have changed that in the recipe below. I also made mine a little bigger by only making a dozen. (The Original yields 14 cookies)

Chocolate Crescents

 While some people may not consider this a holiday dish, I first remember seeing it in the December issue of Southern Living 2003.This recipe has always been a favorite of mine and something that I wanted to serve at my Crescent party but I ran out of time! This would be something great to make with leftover Christmas candy. I remember making them one time for a Valentine's Day treat!

Week 10 of 12 Weeks of Christmas Cookies! -- Meringue Surprises

As unhealthy as it is, I could literally eat my weight in meringue.

I love the fluffy white stuff (but not on banana pudding)!

Have you ever heard it as cow slobbers?!? 

(Yeah, me either until I moved to Kentucky but that's the only place I've ever heard it called that!) 

As I was looking for a recipe for this week, I am really happy I found this one. These little gems are like little puff balls of sugar with bits of chocolate in them!

Pumpkin Muffins (that might change your life)

(Please don't judge this recipe by my horrible photography skills.)

A good friend sent me this recipe and the original post says that this recipe will change your life. Living in house where I am the only one that likes pumpkin, it's not that life changing BUT it is still a wonderful recipe! I took these into work and we all loved them! The muffins have a cake like texture but are still moist and the cream cheese just adds a little something to them.

Help Me Win a Bet

My dear, loving husband doesn't think that I can use all of this within 6 months. So we made a bet. And he doesn't make bets unless he knows he is going to win. Now we didn't really set terms of the bet so I don't know what will happen if he loses (because I am going to win!) ..... BUT

Week 11 of 12 Weeks of Christmas Cookies-- Red Velvet Cookies

Welcome to Week 11. We are now officially in the heart of the Christmas season! What a wonderful collection of cookies we've had and we are finally on the next to last week!

 

Sometimes there is nothing better than a big, fat, slice of Red Velvet Cake. And the best part is the CREAM CHEESE FROSTING. So why not in a cookie?!?!?

I've had this recipe bookmarked for the entire time we've been baking cookies and the planets, stars, the good Lord's intervention whatever you want to call it has finally come together that I have all the ingredients in my house to finally make these cookies. I really wanted to send these to my friend Brian, as his birthday was last week and he loves red velvet cake, but the girls at work got them instead because I was afraid of what would happen with the cream cheese frosting!

I can remember as a child my mom always trying to rush around and make some holiday treats for her co-workers and our teachers and never really had the opportunity to make my own until this year. Some of my friends that live far away will be getting these treat boxes. I love the design on them!

Homemade Gift Idea #2 -- Peanut Butter Cookie Dough Balls

Yeah. I know. Not much of a ball. BUT they are sooooo good and this gift was someone specific. The person these were made for likes Peanut Butter Chocolate Chip Cookies so I hope that she likes the dough balls. It reminds me of the chocolate chip cookie truffles but more of a cookie form. It was also nice that the recipe didn't call for anything out of the ordinary (for my house anyway).

Wednesday's Homemade Gift-Peanut Butter Fudge

 There is nothing better at the holidays than a really good piece of peanut butter fudge. My mom would always make a peanut butter fudge at the holidays but it was more of a Chocolate Peanut Butter fudge because it was just melted Peanut Butter and creme drops candy.

I loved this fudge and loved how easy it was to make!

Happy Birthday Cameron!

So as a mom, I have to do this post.

My oldest son, Cameron, is TEN today. I really can't believe that he's as old as he is because he still wants to be my little man sometimes but I am so proud of the young man that he is becoming. The last 4 months have been tough on him. He lost a great-grandparent, a grandparent and then moved all within a month of each other but luckily he's been great through it all. 

I LOVE YOU CAM AND HAPPY BIRTHDAY! 

P.S. He is my child that isn't shy and loves that I have a blog so if you want to say Happy Birthday I will show him the posts! 

 

Thursday's Homemade Gift--Hot Cocoa Bread

I am so happy to have found Abby's Sweets and the 12 Weeks of Christmas Cookies. I have found many great friends and enjoyed a wonderful experience blogging with everyone! Abby had posted this recipe a few weeks ago and I thought it would be a great bread to make into mini loaves.

It made a very thick batter, which I was surprised at but I loved how the marshmallows added a fun experience to the bread too!

Week 12 of 12 Weeks of Christmas Cookies- Chocolate Andes Mint Cookies

Week 12 has finally approached. I really can't believe that we have made it all the way here! It has been a blast seeing everyone's cookie traditions and getting to know the different bakers!

I have a tiny tradition when I go to Cracker Barrel, that I always get one or two of those lovely chocolate andes mints. I love those little mint chocolates and loved them in this recipe! The cookies were a great blend of mint and chocolate!

Homemade Gift Idea-- Candied Pecans

I LOVE these darn things. In fact, I've been making these pecans since I was married to my ex-husband (Cam's dad). Every year he would get a 5 pound bucket of pecans for Christmas and his mom and I would try to find every way we could to use those pecans up! We would be making praline pecans, pecan pies, pecan whatever we could find with the name in them! 

They are very similar to the ones you find at the mall but so much better!

Chocolate Covered Peanut Butter Crackers

I had a quest this year to make one homemade treat as a present for my family members. My sister's boyfriend had asked me to find a recipe for Caramel Puff Corn a few years ago and I had never found one until this year. However, time has gotten the best of me. My sister had told me that he was currently in love with Chocolate Covered Ritz Peanut Butter Crackers.  The crackers were definitely something I had to make! They were super fast and easy and I hope he loves them!

(Luckily for me he doesn't know I found the Caramel Puff Corn recipe AND his birthday is next month so I can make it then!)

(I used chocolate candy bark though because that's what I had in my pantry!)

 

M&M Christmas Cookies

 I absolutely love M&Ms. I grew up getting spoiled on them from my Grampie. In fact, in their house, even to this day, there is a little cross stitched thing that says I love getting M&M's at Grampie's House. While my Grampie hasn't been around for the last ten year and this is my first Christmas without my Grammie, I wanted some small way to celebrate my memories with them. (My sister is going to cry if she reads this, so maybe I should just tell her not to right now!)

This is my part of the What's Baking? group for December. Our theme this month was Holiday colors and these cookies definitely fit the bill. I also have a habit of baking cookies every Thursday for the 12 Weeks of Christmas Cookies!

The Good and The Bad

It's been an interesting last few weeks around this household. My grammie would always say something good for something bad (or at least my mom said she said this) soo here goes...

The Bad...

  1. My grammie passed away on Thursday, August 26th, 2010. My grammie was my world and I was hers. You see I was the first grandchild, therefore, I could do no wrong. My sister would often get mad because of the fact that you could always tell I was the first grandchild.
  2. My Cameron went back to his dad on Saturday. I love spending time with him and the time goes so fast. I can't get enough time with him!
  3. Cameron's pappy passed away on Sunday. When you talk about how my grammie was with me... that was Cam and his pappy. It was a tragic accident and everyone in the family is in shock Cam's dad said.

The GOOD!!!! (and these are really good things too!)

  1. I know without a doubt that my Grammie is in heaven and is with her sisters and my grampie and is having an absolute blast. She was the last of 7 sisters (and 1 brother!) and I can remember them going to church and playing cards and drinking coffee together.
  2. MY CAMERON IS MOVING BACK SOUTH!!!!! And closer (like 4 hours close!)... They are moving to Corbin,KY.
  3. Something Cameron said to his dad about his Pappy passing was that he knows he's in Heaven looking down on him.
  4. IT IS SO WONDERFUL THAT EVEN THOUGH WE ARE ALL SAD ABOUT MISSING THESE PEOPLE THAT THESE PEOPLE ARE HAPPY AND IN HEAVEN.

Now, I've got to get right with my life. I used to go to church all the time and be really involved and I don't do squat now. So It's going to be done. I will need help but it will be done!

Thankful Thursday

  1. I am thankful I got to talk to my Cam this morning! I normally am only allowed to talk twice a week but his step-mom needed to call me for something for his pappy's funeral.
  2. I am prayerfully hoping for a better relationship with my ex-husband and his wife. We definitely have a love/hate relationship.
  3. I am thankful for my husband and the fact that he tells me I can come home to Chattanooga any time I need to do so. (even though he may regret this soon, as my bestie is getting married!!!! in June)
  4. I am thankful for my friends. Even though they are far away I love them all.
  5. I am thankful that my Coley is feeling better! He had 3 teeth coming in at the beginning of the week and only wanted to be held (which is totally fine!) but he's becoming his normal self again.... only with a molar now!

Traditions

On September 13,2007, my now husband proposed at a really fancy French restaurant in Philadelphia. We made a pact that night that we would always celebrate that day by eating out at somewhere nice like this restaurant.

2008-- We ate at Home in Atlanta. It was an ok meal. Nothing that Roger couldn't have created at home for us. But it's always nice to get dressed up and go out to eat.

2009-- We cooked. We had just had a baby and it was grandparent's day so we decided to stay home and cook for my mom (since we were living with her then). Roger made trout, risotto, and spinach. Really good meal.

2010-- Last night we went to Stella's Southern Bistro. It was definitely the best meal we've had since being in Greenville and considering we normally try somewhere new once a week that's saying a lot. This town is definitely a foodie town (even though I really wonder where some of these people got their tastes at!).
